Stuffed Peppers

Ingredients

  • 8 oz. diced Polish sausage
  • 8 oz. ground beef
  • 1 cup cooked white OR brown rice
  • 1/2 cup white wine
  • 1 egg, beaten
  • 2 Tbsp. EACH dried sage and thyme
  • 2 cloves garlic, minced
  • 3 medium green bell peppers, halved, seeded
  • 1/2 cup minced fresh parsley

Directions

  • 1. Preheat grill to medium direct heat.
  • 2. Combine all ingredients except peppers and parsley. Fill pepper halves with meat mixture.
  • 3. Grill peppers 12 to 16 minutes or until internal temperature of meat mixture reaches 165°F.
  • 4. Plate 2 halves per serving. Garnish with parsley and serve.
