Pork Fajitas

Ingredients

  • 1/2 cup canola oil
  • 1-1/2 lb. thinly sliced smoked ham
  • 3 green bell peppers, julienne
  • 3 onions, julienne
  • 3 peeled plantains, thinly sliced
  • 4 oz. pureed chipotle peppers in adobo sauce
  • 4 oz. grainy mustard
  • 4 oz. sour cream
  • 20 (8-inch) heated flour tortillas
  • 1-1/2 lb. heated carnitas OR pulled pork
  • 1-1/4 lb. shredded Queso Fresco

Directions

  • 1. Cook ham, green peppers and onions in oil in large skillet on medium heat 6 to 8 minutes or until caramelized.
  • 2. Deep fry plantains in preheated 350°F deep fryer 3 to 4 minutes or until golden brown; drain.
  • 3. Meanwhile, combine chipotle peppers, mustard and sour cream.
  • 4. Top tortillas with carnitas and ham mixture. Sprinkle with cheese. Drizzle with sour cream mixture. Plate 2 tortillas per serving.
