Meatloaf

Ingredients

  • 1-1/4 lb. ground sirloin
  • 10 oz. minced red onions
  • 6 oz. plain dry bread crumbs
  • 3 oz. chopped bacon
  • 1/2 cup ketchup, divided
  • 2 large eggs
  • 2 Tbsp. chopped fresh parsley
  • 1 Tbsp. chopped fresh thyme
  • 1 tsp. salt
  • 1 tsp. ground black pepper

Directions

  • 1. Preheat standard oven to 375°F.
  • 2. Mix beef, onion, bread crumbs, bacon, 6 Tbsp. of the ketchup, eggs and seasonings in bowl by hand. Form into a loaf on parchment paper-lined half sheet pan. Spread remaining 2 Tbsp. ketchup over top.
  • 3. Bake 50 to 60 minutes or until internal temperature reaches 160°F.
  • 4. Slice and divide evenly between 4 plates and serve.
