Winter Soup with Ham

Ingredients

  • 1/2 cup butter
  • 8 oz. diced Ham-Off-The-Bone
  • 2 cups frozen corn kernels
  • 1 cup chopped onions
  • 1 peeled medium parsnip, cut into 1- inch pieces
  • 1 peeled medium Yukon Gold potato, cut into 1-inch pieces
  • 1/2 cup chopped red bell pepper
  • 1/2 cup chopped green bell pepper
  • 2 chopped garlic cloves
  • 1 smoked ham hock (about 10 oz.)
  • 5 cups chicken broth

Directions

  • 1. Sauté diced ham, corn, onion, parsnip, potato, peppers and garlic in butter in saucepot on medium heat 5 minutes.
  • 2. Add ham hock and broth. Bring to a boil; reduce heat to medium-low. Simmer, uncovered, 20 minutes.
  • 3. Remove ham hock. Divide soup evenly between 8 bowls and serve.
